The ingredients needed to make Jambalaya:
  1. Prepare can Dei Frateli Diced tomatoes (Garlic Basil)
  2. Prepare chicken breasts
  3. Take shrimp, raw shelled deveined
  4. Prepare baby carrots, chopped/small bag already shredded carrots
  5. Take large onion, chopped
  6. Take minced garlic, jar
  7. Get fresh diced oregano
  8. Get fresh diced basil
  9. Make ready salt and pepper
  10. Take cooked rice
  11. Take Pico de gallo
Steps to make Jambalaya:
  1. Spray crockpot with cooking spray. Turn on to low.
  2. Place onion, carrots, basil, oregano, salt, pepper, garlic, tomatoes and chicken breasts in crockpot. Cover and let cook for 6-7 hours until chicken is cooked through and veggies are tender. Add chicken stock if needed.
  3. Add shrimp and rice. Turn crockpot to high and let cook for 30 minutes. While shrimp is cooking, cut chicken into chunks or shred.
