The ingredients needed to make Jambalaya:
  1. Prepare 14 1/2 oz can Dei Frateli Diced tomatoes (Garlic Basil)
  2. Take 3 chicken breasts
  3. Take 1 pound shrimp, raw shelled deveined
  4. Prepare 8 oz baby carrots, chopped/small bag already shredded carrots
  5. Make ready 1 large onion, chopped
  6. Make ready 2 Tbsp minced garlic, jar
  7. Prepare 1 Tbsp fresh diced oregano
  8. Prepare 1 Tbsp fresh diced basil
  9. Get to taste salt and pepper
  10. Get 2 c cooked rice
  11. Make ready 8 oz Pico de gallo
Instructions to make Jambalaya:
  1. Spray crockpot with cooking spray. Turn on to low.
  2. Place onion, carrots, basil, oregano, salt, pepper, garlic, tomatoes and chicken breasts in crockpot. Cover and let cook for 6-7 hours until chicken is cooked through and veggies are tender. Add chicken stock if needed.
  3. Add shrimp and rice. Turn crockpot to high and let cook for 30 minutes. While shrimp is cooking, cut chicken into chunks or shred.
  4. Serve while hot. Enjoy! (Photo is without shrimp and rice added yet)
