Make ready 200 gms Paneer
Make ready 3 sliced Onions
Take 5 Sliced Tomatoes

Get 1 tsp Tandoori Tikka Masala (optional)
Make ready 3 spoon fresh cream
Prepare 50 gms khoya/mawa
Prepare 1/2 Cup water
Take 1 spoon Sugar
Get 1 tsp Kasoori Methi
Prepare 5-6 saffron strands soaked in water
Make ready For Kulcha
Get 1 1/2 Cup Whole wheat Flour
Take 1 1/2 Cup All-purpose Flour
Get 4-5 tbsp Curd
Prepare 3/4 tsp Baking Soda
Get 3/4 Cup lukewarm Water
Instructions to make Shahi Paneer with Masala Kulcha:
In a Pan add 2 tbsp oil, add tej patta, laung, cinnamon, elaichi & star anise.
Add onions & cook until transcluscent.
Then add tomatoes & add a little bit of Salt.
Add garlic & ginger. Mix well.
Add cashew, badam & watermelon seeds. Cook until tomatoes become soft & mushy.
Then add 1/2 cup water and again cook for 10 mins.
Cool Down this gravy and until then shallow fry paneer but its colour should not change.
Once the gravy is cooled, grind it in mixer grinder and then sieve it.
Take a pan and add 2 tbsp oil, jeera, red chilli powder & turmeric. Give this a good mix and immediately add the sieved gravy.
Then add dhaniya powder & tandoori tikka masala. Cook for 2 to 3 mins.
Then add cream & khoya, kasuri methi, sugar & again cook for 2-3 mins.
Add paneer, some saffron soaked in water & 1/2 cup water. Cook on low flame until it comes on oil.
Serve hot with cream, coriander leaves & grated paneer.
For kulcha mix all ingredients except water.
Then make a dough with water and let it rest for 30 mins.
After 30 mins roll out rotis out of dough it should be slightly thick than phulka. Then add onion & fennel seeds, some coriander leaves on top.
Brush water on other side and stick on iron tawa and cook until bubbles come.
Then invert the tawa and cook from other side, it will give tandoori effect.
Serve hot with shahi paneer.
