Make ready 1 tablespoon ghee
Prepare 1 cup oil for frying onions will take 2 tablespoons for cooking further
Prepare Flavourings
Make ready 1/2 lime juice
Prepare as required Coriander leaves for garnishing
Get For mutton masala
Prepare 15-20 cashews
Get 1 tablespoon coriander seeds(sabut Dhanya)
Prepare 2-3 tablespoons desiccated coconut powder
Get 2 cloves
Take 2 cardamoms
Instructions to make Dhaba style mutton masala:
Let’s start cooking we will dry roast mutton masala spices on low flame until golden brown cashews,coriander seeds,cloves,cardamoms,desiccated coconut powder set aside for few minutes to cool down till room temperature.
Besides we will deep fry the chopped onions until golden brown and also we will wash mutton & take pressure cooker add in mutton,turmeric powder,salt,1 teaspoon ginger garlic paste and a cup of water cover the lid & let it cook until 2-3 whistles set aside the mutton is soften.
Now we will make a fine paste of mutton masala without using any water we will add curd,and roasted spices make a very fine paste. While the onion in Kadhai is fried until golden brown we will add ginger garlic paste,green chili’s sauté for a minute & pop in the prepared masala keep stirring to avoid getting it stick to bottom then add red chilli powder mix well
We will fry the masala until the oil separates then we will add ghee & the boiled mutton with its soup mix well then add kasuri methi,Garam masala powder
Set it on low flame let it boil for 2 minutes now set it in low flame squeeze in lime juice,add coriander leaves,taste the spices at this point if required accordingly to the taste if required add 1/2 teaspoon sugar it enhances the flavours. While the oil & ghee separates a layer it’s ready off the flame.
