The ingredients needed to make Dahi vada:

  2. Prepare 1/2 cup urad dal
  3. Make ready 1/2 inch ginger
  4. Get 1 green chili
  5. Prepare 1/4 tsp salt

  7. Prepare For soaking vada :
  8. Prepare 4 cups lukewarm water
  9. Make ready 1/4 tsp salt
  10. Make ready 1/4 tsp hing
  11. Take For sweet curd :
  12. Take 3 cups thick curd
  13. Take 3 tbsp sugar
  14. Prepare 1/2 tsp salt
  15. Make ready For serving :
  16. Get as required Green chutney
  17. Get as required Tamarind chutney
  18. Make ready as required Pomegranate seeds
  19. Make ready as needed Mint leaves for garnish
  20. Make ready 1/2 tsp cumin powder
  21. Get 1/2 tsp chaat masala
  22. Make ready 1/2 tsp Kashmiri chili powder
  23. Make ready 1/4 tsp black salt
Instructions to make Dahi vada:
  1. Wash and soak urad dal for 6-8 hours or overnight. Drain the water completely.
  2. Transfer the urad dal to mixer jar along with roughly chopped ginger and green chili. Add very little water as needed and grind to a fine paste.
  3. Transfer urad dal paste to a bowl. Add salt and whisk well for 4 mins. Batter will be light and airy.
  4. Heat oil in kadai. When the oil is hot enough, keep the flame low to medium flame. Drop small amount of batter in oil. Do overcrowd the kadai. When they are light golden, flip them and fry them until golden and crispy. Drain them on a tissue paper. Prepare other vadas too.
  5. In a wide bowl take lukewarm water, add hing, salt and mix well. Dip the vadas in the water for 20-30 mins. Vada will absorb water and increase in size.
  6. In another bowl take thick curd and whisk until smooth. Add sugar, salt and whisk until sugar dissolves.
  7. Remove one vada at a time from water and carefully press down in between spatulas to remove excess water.
  8. Add the squeezed vadas into the bowl of sweet curd. Cover the vada with curd. Let it rest for half an hour before serving. It can be prepared one day b4 and refrigerated for parties. Do garnishing before serving.
  9. For serving prepare spice mix. In a small cup take all the spice powders, mix and keep ready.
  10. Transfer vadas to a bowl with generous amount of curd. Top with green chutney and sweet tamarind chutney.
  11. Sprinkle the prepared the spice masala. Followed by pomegranate seeds and pudina leaves.
  12. Serve yummy dahi vadas immediately.
