  1. Prepare FOR Cooking of Rice-
  2. Prepare 1 cup long grain Basmati rice soaked in 3 cups of water for 30 minutes
  3. Prepare 2 green cardamons, divided
  4. Get 2 cloves
  5. Make ready 1/3 tsp salt
  6. Make ready 1 tsp ghee

  8. Prepare 2 medium onions, sliced thinly
  9. Make ready 1 small potato
  10. Make ready 1/2 cup cauliflower florets
  11. Make ready 1 medium carrot, chopped
  12. Get 5-6 beans cut, 1" size
  13. Get 2 tbsp broken cashewnuts
  14. Make ready 2 tbsp milk
  15. Get As required Saffron strands (2 pinches)
  16. Take 1 inch ginger, crushed
  17. Make ready 4-5 cloves garlic
  18. Get 2 green chillies (optional)
  19. Get 1/2 tsp cumin seeds
  20. Get 1 inch cardamon stick
  21. Prepare 1 bay leaf
  22. Prepare 2 whole black pepper
  23. Take 1/3 cup plain yogurt
  24. Make ready 1 1/2 tsp biryani masala
  25. Take 1/2 tsp Kashmiri red chili powder
  26. Get 1/4 cup water
  27. Prepare 2 tsp Green coriander, chopped
  28. Take 1 1/2 tsp rosewater
Steps to make Dum Veg Biryani:
  1. Soak rice with 3 cups of water for 30 minutes. After that, discard the water. - Boil water with 2 green cardamoms, 2 cloves and 3/4 tsp salt. Add soaked rice and cook uncovered till 70-75% cooked. Drain the rice into a container and set it aside.
  2. Heat 1.5 tbsp ghee in a pan and add 1 sliced onion. Cook till the onion caramelizes.
  3. To the same pan, add cashews and fry till golden brown. Then, add potatoes to the same pan and cook till brown. Finally, add the rest of the vegetables and cook till light brown. Remove the vegetables to a plate.
  4. To warm milk, add saffron and keep aside.
  5. Crush ginger, garlic and chilli.
  6. Heat 1.5 tbsp vegetable oil. Add cumin seeds and the rest of the garam masala (cinnamon, bay leaf, peppercorn, cardamon and cloves).
  7. After getting aroma, add chopped onion and 1/4 tsp salt. When the onion gets brown, add the ginger-garlic-chili paste. Cook until the rawness of the masala is gone.
  8. Whisk yogurt. Remove the pan from the flame and mix the yogurt with the masala. Then, add the fried vegetables.
  9. Add biryani masala and chili powder, along with 1/4 cup of water. Cook the vegetables till almost done.
  10. Layering the Biryani - - Grease a heavy bottomed pan. Add a layer with half of the rice. Top with fried onion, half-fried cashew nuts, 1/2 tsp rosewater and the veggies. Then, add another layer with the remaining rice on top of the veggies. Again, top with the remaining fried onion, cashews and add the prepared saffron milk.
  11. Cover the pan tightly. Cook on the lowest flame for 25 minutes. The Dum Veg Biryani is ready to serve with raita.
