Steps to make Aloo dum biryani:
  1. Soak rice for half an hour. Rinse water. Add water, black and green cardamom, black pepper, cloves, bay leaves, ghee & salt. Cook 90 %.
  2. Heat some oil & fry potatoes.
  3. Fry onions
  4. Heat oil. Add cumin seeds, ginger & green chili.
  5. Add onions. Saute till it becomes golden brown in colour.
  6. Add tomatoes. Saute for 3 to 4 minutes.
  7. Take curd in mixing bowl. Add cumin coriander powder, red chili powder, kashmiri red chili powder, garam masala & turmeric powder & salt.
  8. Cool our onion tomato mixture then add curd mixed with powdered spices.
  9. Then start flame, cook till gravy reduces. Add mint leaves.
  10. Add potatoes & water. Cook for 5 minutes.
  11. Dum cook biryani by layers. First put potato gravy then rice. Pour some fried onions. Again put potato gravy. After that rice.keep some fried onions, coriander & mint leaves.
  12. Heat tawa. Keep biryani layered pot on it & dum cook for 15 minutes.
  13. Our aloo dum biryani is ready. Serve with vegetable raita.
