Get 1 cup kabuli chhole
Get 1 tea bag
Prepare Pinch eating soda
Get 2 amla pieces

Take 1 inch ginger
Prepare 5-6 garlic cloves
Get 1 tbsp red chili powder
Make ready 1 tbsp kashmiri red chili powder

Prepare 1 tbsp roasted kasoori methi
Make ready 1 tbsp cumin coriander powder
Get 1 tsp turmeric powder
Make ready as per taste Salt
Make ready 5 tbsp Oil for tempering

Steps to make Punjabi chhole:
Soak chana or chole overnight. Remove water. Add amla pieces, a pinch of soda & amla pieces. Pressure cook for 6 whistles. Amla pieces & tea bag is used to get dark color.
Heat oil in a pan. Add onion. Saute till it gets golden in color.
In the mixer jar, add tomatoes, green chili, ginger, garlic & cumin seeds. Make paste.
Add this paste to the onion. Saute for 8 to 10 minutes. Add cumin-coriander powder, turmeric powder, red chili powder, Kashmiri red chili powder & chole masala.
Add boiled chole, water, salt & kasoori methi. Cook for 15 minutes. Serve with kulcha, paratha, bhatura, puri, or pulav.
