Take 200 gm chhole chana(chickpeas)
Take 3 tomato purée

Prepare 2 tbsp oil
Take 1 tbsp butter or ghee
Make ready For tawa kulcha -
Make ready 1/2 cup all-purpose flour (maida)
Get 1/2 cup wheat flour
Take 1 tbsp oil
Prepare 2 tbsp ghee or butter
Take 1/4 cup curd
Take as required water
Make ready 1/2 tsp salt
Take 1 tsp carom seeds
Prepare 1/2 cup Lukewarm water
Get 2 tsp sugar
Make ready 1 tsp yeast
Steps to make Chhole kulcha:
Together all ingredients,wash & soak chickpeas in warm water for 4 -5 hours.After 5 hours. add soaked chickpeas in pre heat cooker,add tejpatta,cloves,cinnamon stick,salt,fennel seeds,1 beetroot slice,1/2 tsp eno soda,add 1 cup water close lid,cook until 5 whistles on medium flame.
In a mixture jar add semi boiled chopped tomato, onions,2 tbsp boiled chhole,garlic,blend it make purée.
In a pre heat pan add 1 spoon oil add tomato onion purée chhole masala,coriander cumin powder,salt,turmeric,asafoetida,green chilli ginger paste,stir continuesly cook for 3-4 minutes.
Now add boiled chickpeas,add 1/2 cup water,amchur powder,cook for 7-8 minutes stir occasionally.off the flame,close the lid,rest for 10 minutes.Then serve in a serving bowl.
For tawa kulcha—-1/2 cup warm water,sugar,yeast,mix well keep aside for 10 minutes,Now take a bowl add maida,wheat flour,salt,curd,carom seeds, oil,add activated yeast mixture,mix all with fingers add required water,prepare soft dough,apply some oil on upper surface,cover it,& keep it for 2-3 hours.
After 2-3 hours again knead dough with ghee,prepare dough ball,dust flour roll it with rolling pin,apply water on one side sprinkle kalonji or black sesame seeds,chopped coriander press slightly.preheat tawa put kulcha on it sprinkle water on sides close lid cook for 2 minutes one side now flip it cook it,cook both sides,
Now our yummy tasty chhole,kulcha ready to serve.serve with onion rings & lemon slices.
