Steps to make No Oil Dum Aloo:
Wash and remove all the dirt and mud from the baby potatoes. Keep it for boiling in salted water until just done. Cool at room temperature.
Peel the potatoes after cooling and pierce them all over with the help of a a fork.
Prepare marination by adding all the ingredients together. Mix well with baby potatoes
Cut onion into small pieces. Cut chop tomatoes and additional in a Pressure cooker. Add cashew nuts, small cardamom and ½ cup water. Pressure cook for one whistle.
Let the pressure of the cooker drop. Cool and make the puree.
In a pan dry roast cumin seeds, and bay leaf. Add½ cup water and pour the puree in a pan and cook on medium flame covered for 5 minutes.
Now add the marinated boiled baby potatoes in the cooking puree un a pan and cook for another 8-10 minutes. Stirring occasionally in between.
When the puree is thick and potatoes are cooked, add sugar and garnish with fresh coriander leaves.
Serve with phulkas, roti or rice or pulao.
