Instructions to make Dry vegetable with Cauliflower and potato:
  1. First of all chop 1 medium sized cauliflower in medium size florets. Rinse the cauliflower florets very well in water.
  2. Now in a wok heat oil, lower the flame and add methi Dana seeds - When they turn roasted, add grated ginger.
  3. Now add a pinch of hing and whole cumin seeds. - Once they splutter, add slit green chillies and turmeric powder to the oil, followed by red chili powder and coriander powder.
  4. Stir a little and add potato cubes and cauliflower florets to the masala giving a nice stir so that all the pieces get covered nicely in the masala.
  5. Then add salt to taste and stir again very well, so that the spices are mixed uniformly in the sabzi and coat the veggies also evenly.
  6. Cover the wok with its lid tightly. simmer the aloo gobhi 18 to 20 minutes on a low flame.
  7. In between stir it for a couple of times, remove the lid and stir the aloo gobhi well. cover and then again continue to cook. Don’t add any water.
  8. Once the potatoes and cauliflower are cooked, switch off the flame.
