Take 1 medium-size cauliflower

Steps to make Air Fryer Gobhi Manchurian:
Chop the cauliflower into medium-size florets and blanch in hot water for 10 minutes and drain the water completely.
In a bowl take all the ingredients mentioned for batter. Add water gradually and make a medium thick batter. Preheat air fryer at 180 degC for 2 minutes.
Add in florets to the batter and mix gently to coat well.
Brush the air fryer basket with oil. Spread coated florets in single layer. Air-fry at 180 degC for 8 minutes. Brush with oil, flip and air-fry for another 8 minutes until crispy. Check in between and adjust timing depending on the size and quantity of florets.

1. To prepare sauce. In a pan heat oil, add in finely chopped garlic and ginger. Sauté until aromatic. Add in chopped spring onion white and sauté for 30 seconds. Add all the tomato ketchup, chili sauce, soy sauce, vinegar and cook for a minute.
Make a slurry of 1 tbsp corn flour with 1/4 cup water. Add it to the pan and stir until sauce thickens.
Just before serving, add crispy florets to the prepared manchurian sauce and mix to coat evenly. Add in spring onion greens.
