Take 200 g White kidney bean jam
Prepare 4 Tbsp (36g)Rice flour
Get 1 Tbsp Matcha Powder
Take 1 Tbsp Hot water
Prepare 60 g Chocolate
Prepare 2 eggs
Prepare 2 Tbsp Sugar
Instructions to make Chocolate chip & Matcha "Ukishima" (Wagashi):
Ingredients *Crush the chocolate and separate some bigger pieces for topping
Prepare the mold. Cover inside of the mold with a parchment sheet
Mix the bean jam & the yolks well in a boul.
Add the rice flour into the mixture and mix them well. Then put the match powder dissolved in the hot water into it. And mix them well.
Make meringue with white of the two eggs and the sugar. Add the mixture of No.4 and the crushed chocolate into it, and mix them. Pour it into the mold and make the surface flat. Sprinkle the chocolate for topping on the surface.
Put the mold in a steamer. Put it on chopsticks to make a space under it. Steam it for 20minuites over a high heat. *Water in the steamer should be boiled when you put the mold. *Put a cloth under the lid to avoid dews dropping on the cake.
Unmold and put the cake on something like a toasting net to cool it. During cooling it, cover it with a cloth to keep it moiste. Cut it and enjoy it. If you don't eat all of it at once. Wrap it with plastic wrap and put it in a freezer.
