Cook the squash: Preheat the oven to 350°. Cut the spaghetti squash in half lengthwise. Scoop out the seeds. Rub ¼ tablespoon of olive oil on each half and sprinkle with ¼ teaspoon of salt and ⅛ teaspoon pepper. Add a pat of garlic butter to the center of each half. Place in the oven, flesh side up, and roast for 40-60 minutes or until flesh is softened. Also, boil your pasta water and cook your noodles.
Meanwhile, start your sauce in a medium sauce pan and add meatballs, vegetables, brown sugar, seasonings, & 1 tbsp of parmesan cheese. Cover & Simmer.
Using a fork scrape the insides of the squash to make strands. Add about 1 cup of spaghetti noodles to each half and toss to mix together.
Add a layer of half the peppers and half the cheeses on top of pasta/squash mixture.
Cover with pasta sauce and meatballs.
Add final layer of remaining peppers & cheeses.
Top with sliced or shredded green onion or oregano.
